Do you use nv with polling or without? Using emergency_intr or not?

neither. I occasionally have device timeouts, but they are just freezing the whole box for some seconds, then everything continues (including data). this only happens when i copy large amounts of data via NFS/UDP.

Ok, I'm very confused since we have the same motherboard. Do you know which BIOS you're using?

I tried with the nv driver with a stock config, no polling or anything
and I get this right after ifconfig'ing the driver:

intr 7 at 50001 > 50000 Hz, livelocked limit engaged
intr 7 at 7378 < 20000 Hz, livelock removed

Then after trying to send traffic or even just waiting a bit, I get:
nv0: device timeout(1) flags 0

vmstat -i shows me that there were over 61000 (yes, sixty one thousand)
interrupts, but then trying to send traffic over the card after that
doesn't ever make that number change again.

Yep. I'm confused. I've tried this all without ACPI as well.

I'm downloading a FreeBSD CD to give it a shot. Any ideas in the
meantime would be very much appreciated.
